And yet, Another Meatless Monday!

I am really beginning to enjoy these meatless Mondays now. They're delightful, Delicious, and cause us to explore more, we've been doing it for just about a month now, and not only do we go meatless, we don't repeat any part of the meal at all. What I've really grown to love about our meatless Mondays is that they become uber healthy Mondays too. For example, last night we had a stir fry chock full of veggies, with a delicious glaze Jeremy created to pour over it. On the side we enjoyed fried-rice. Also chock full of peas, and carrots, and veggies. I know rice is pretty much anything but raw, but its still Delicious, and sometimes I just need something cooked especially since it was one of our first real meals back home from D.C.

Thaaaaats right! we spent four glorious days in D.C. our visit was a result of my younger brother's 21st birthday, which my parents quickly turned into a full-on family vacation, all sig. others invited. so we woke up at 5am last Thursday and made the trek all the way down to Alexandria VA which is by the way beautiful! the apartments remind me of the houses from the television show Madeline (french) that i used to watch. Delightful. that night we visited Old Town and had an wonderful time. My brother and I swing danced on the doc to a four piece band that was playing on the yacht next to the dock. Couldn't have asked for a better beginning to an amazing trip. The trip progressed after that, i brought my coconut water, and other healthful fruits and veggies in order to continue at least some healthy habits. Coconut water in the morning each day, my green tea extract etc.
We saw many a monument. Amazing Monuments! While I do believe our country has a lot of things within the government that should be altered and fixed, I also feel that there's something really great about belonging to these United States.
We also walked pretty close to five miles a day, which was great, the best part was that I've been working out, so I wasn't sore, which rocked my socks off.

Anyways,
I'm off to Loris after work tonight for more coconut milk, and an all raw recipe tonight!
trying out the Mango Sorbet, and I'm thinking about whipping up these great Banana Ice Cream things that my friend Brigitte thought up, I just know they'll be deeelicious!!


I think i do this weekly - blog on the day after meatless Mondays thing or on Meatless Monday, I learned recently how much farm land my boyfriend and I help save by not eating meat on Mondays...it feels great! I am also looking to be picking up a few new necessary kitchen utensils, like a larger food processor, a juicer, a second blender, a lemon press, stuff like that...

Another Meatless Monday

Good Morning Coconut Cravers!
I have a bit to write about here in regards to the Raw food diet this morning. This weekend was eye opening and exciting.


Unfortunately a good friend of mine's father passed on last weekend, and the memorial service was friday, and the funeral this past saturday, feeling for him i've shed tears, realizing my own parents mortality, and not ever wanting to experience what he is, watching his mother having lost the one she loved so dearly, for over 40 years, heartbreaking. My friend I've known since childhood, and watching him tend to his mother was quite endearing and actually amazing, I'm so glad that I could be there to see it. He and his family are in my prayers, for these next few weeks are always the hardest.

Also,

In the office i work in there are only three of us, and unfortunately for me, our sales guy (whom i appreciated, and adored for his knowledge and humor) quit on Friday. Upon hearing this my boss, and the owner of the agency suggested his immediate removal from the office. This did NOT go well, and I will miss him, and his experience in large amounts. As he cleaned out his desk Friday I fought back both tears, and curiosity, and I, am a nosey, curious person, I wanted to hear the whole story, where was he going, did he have a new job? As I listened to him and my boss argue over what belonged to who, headsets, cameras, the works, I found myself wondering if now was my time to shine at work, I began planning my Monday power=house outfit. If i managed to sell 10 renters policies every two weeks, that would average an $100.00 bonus on my check, and with August being such an extreme month I could really use that help! So, I've been targeting all friends, family, and otherwise telling them all the ins and outs of insurance, and letting them know what I had to offer them as far as a renters policy was concerned. I think I'll have at least 50.00 extra dollars this week, in regards to renters policies.
Well after my co-worker left my boss stated that we needed to meet, and I hesitant as I had a very important memorial service to go to resigned my concerns and entered his office.

Now, I'm already uncomfortable with the idea of having to be alone with my boss on a day-to-day basis, here we are alone in his office, his sales guy just having quit, and he tells me he will be bonusing me each week a hefty enough amount for none of my bills to go delinquent. I was delighted. Naturally my beau and I had to celebrate, we enjoyed sushi! (of course mine was vegetarian, on account of the allergy to shell fish, and overall distaste for seafood.)

Now for the exciting food-stuff!
I found a new haven this past weekend. Loris Natural Foods, good lord Almighty thank you so much. This store has a section dedicated to raw foodists, it also has the best bulk section i could ever ask for, and Delicious raw macaroons, (granted the ones from oneluckyduck.com are far more deeeelish, but these ones can help me cut costs so i can afford things i recently discovered i like!) <--- one of these being...Coconut Milk!!!!

I have uncovered a world of happiness for myself. I enjoyed coconut milk yesterday, and this morning, and its just great, i really enjoy it. Jeremy and I also picked out a coconut, that we're going to open and eat!

I also picked up some mejool dates, and goji berries, as well as received my Ani Phyo book in the mail...raw recipes here I come! big plans for mango sorbet, and "Mexican scramble" and "sweet corn chowder" all in all, a solid weekend.

PPS. I'm thinking for dinner on this meatless Monday, I'm thinking a tomato based gazpacho, or a veggies on a skewer grilling piece...we'll see!

George & Pfunk!



So, quick note, I'm going to see George Clinton and Parliament Funkadelic tonight for FREE at Thursday in the Square! If you're not going yourself, you must be insane. I know its not related to food barely at all, but hot damn am I excited!!



Annnnnnyways I tried a new Raw recipe.

I tried the "brownie" recipe. I think they came out fabulously! They're reallllly rich and some what heavy though, so anyone who makes this recipe I would recommend that you take the mixtures and make them very miniature and bite size! they're so rich and thick that they may require a class of almond milk or water to help wash them down, but they are Delicious!

This weekend I am hoping to try Ani Phyo's version of Mango Sorbet! mmm should be amazing. However I have two house guests from Portland and Tempe, and I would like to spend as much time with them as possible, but perhaps you shall hear from me on Sunday!

Meatless Monday!

Good Afternoon Fellow Blogaholics!

I am writing today, as an continuation from an old blog that originally a requirement for an online web publishing class. This is my new blog (i like this email address better). The old one, should you feel the need to catch up is http://www.curiosity-in-the-kitchen.blogspot.com/.

So, for this last night, our meatless Monday, we gnashed on a most glorious thinly sliced baked sweet potato, a Divine veggie burger, and a delicious small serving of corn.
excellent. not raw at all, but still meatless. We're working on Raw. I've been raw all day today, which is awesome!

Since I've began this journey I've already seen some serious changes in my body. Although the scale isn't really moving I can feel my body moving around me. I've also been running, or walking, some sort of cardio each day, and I am attempting to start practicing Yoga at least three times per week, I've learned that my body really appreciates stretching and strength exercises.

For tonight I am going to try Ani Phyo's Mango Sorbet here's hoping that it turns out to be delicious!
